2 Naan breads
2 tsp olive oil
6 Baby Bella mushrooms, sliced
1/2 red onion, thinly sliced
Pinch of salt
Pinch of Ground black pepper
1/4 tsp Dried thyme leaves
1/8 tsp crushed red pepper flakes
2 Tbsp pesto
1/2 cup fresh mozzarella cheese, shredded
2 Tbsp Parmesan cheese, shaved
1 cup arugula, for garnish

Baby Bella Pizza


Preheat the oven to 400°F.

Place the naan directly on the rack of the oven and heat both sides for about 2 minutes each side. Remove from the oven and place on a cutting board to finish with the preparation of the pizzas.

Spread a tablespoon of pesto on each piece of naan.

In a medium skillet, over medium-heat, add the olive oil, mushroom slices, red onions, thyme, red pepper flakes, salt and pepper. Cover and sauté for until the mushrooms and red onions soften.

Divide the mushroom mixture over each of the pieces of naan. Divide and sprinkle the mozzarella and Parmesan cheeses over the top of each piece of naan.

Place back in the oven, directly on the rack, turning the oven setting to broil. Continue to cook until the cheese melts. Remove from the oven to a cutting board to cut into 8 pieces and disburse and serve.
