Goat Cheese Mashed Potatoes Recipe
Oberon Merlot, Napa Valley

Pair with Oberon Merlot


10 potatoes
6 garlic cloves
1 cup sour cream
10 oz soft goat cheese
1/2 cup unsalted butter, softened
1/2 cup fresh chives, finely chopped (optional)
Sea salt and pepper to taste

Goat Cheese Mashed Potatoes


Peel potatoes and cut in half crosswise. Add salt to a large pot of boiling water, then add the potatoes and garlic. Cook until tender, 25-30 minutes.

Drain the pototoes, then return them to the pot. Dry any excess water over low heat, shaking the pot throughout to avoid burning, about 1 minute.

Press the potatoes through a ricer, or mash until smooth and creamy. Warm the goat cheese and sour cream in the microwave on low for 2 minutes (Optional). Mix the sour cream, goat cheese, butter, salt and pepper in a separate bowl, then add into the potatoes. Stir until the potatoes are smooth, then add the chives to the mixture.

Put the potatoes into a casserole dish and serve immediately.

If you prefer to make these in advance, store in an oven safe container in the refrigerator for up to 2 days. To reheat, cover and bake at 400F for 30 minutes, or microwave on high for 15-25 minutes.
