Cornish Hen with Cranberry Stuffing Recipe

Serves: 3-4


2 whole Cornish Hen
2 Tbsp Italian seasoning
2 Tbsp unsalted butter
Kosher Salt and Pepper
4 cups pre-made cornbread, crumbled
2 stalks celery, minced
2 whole small carrots, minced
1 tablespoon Italian seasoning
1 cup dried cranberries
1/4 cup whisky

Cornish Hen with Cranberry Stuffing


Preheat oven to 400°F.

In a small bowl, combine the dried cranberries and whisky and let soak for 15 minutes. In a large bowl, combine the remaining ingredients and mix together until evenly distributed. Once the cranberries are done soaking, pour the entire mixture into the cornbread mixture and mix until the cranberries are evenly distributed.

Pat dry the Cornish hen so that the seasonings will adhere to the hen, then stuff the cavity of the hen with the dried cranberry and cornbread stuffing.

Evenly sprinkle the Italian seasoning, salt and pepper over the Cornish hen repeating on all sides. Place Cornish hens breast side up in a roasting pan and place one tablespoon butter on top of each hen.

Bake for 35-45 minutes, until the hen's temperature reaches 160-165°F, then remove from the oven and let cool for five minutes before serving.
